Add melon; chill. Garnish with lime slices before serving.  Enjoy your summer and quench your thirst with a glass of healthy iced tea!!!  /// BY THERESE LEYTON Tea is a refreshing drink in the heat, and a soothing drink in the cold. I have always enjoyed a cup of hot tea in the winter, and a glass of cold tea with lots of ice in the hot summer.  Summertime is here, and drinking ice tea with lemon is upon us. To share a glass of delicious ice tea with someone is perfect. There are many interesting concoctions to drink this summer, but tea is the healthiest thirst-quenching brew. It tastes good and there are many different kinds.  TEA AND ANTIOXIDANTS All teas from the Camellia plant are rich in polyphenols, which contain antioxidants that detoxify cell-damaging free radicals in the body. Tea has about eight to 10 times the polyphenols found in fruits and vegetables, according to noted tea researcher John Weisburger, PhD, senior researcher at the Institute for Cancer Prevention in Valhalla, N.Y.  Tea is a natural drink and does not have fat, sugar, or calories. Black, Green, and Oolong come from the same plant – Camellia sinensis – which is grown in lush climates around the world. Black and Oolong teas undergo a natural fermentation step; Green tea does not. Lipton tea contains 175 mg. of antioxidants per serving. Lipton green tea comes from the same plant and contains 135 mg. of antioxidants per serving. A cup of tea has less than half the caffeine as a cup of coffee. Herbal tea does not contain caffeine, and is very popular. Some of the herbs can be grown in your garden.  CHAMOMILE Chamomile, which can grow in your garden, one of the best herbs, and has been in continuous use since the time of the Egyptians. It is used as a calming drink for anxiety, restlessness, indigestion and insomnia.  To make a cup of fresh Chamomile tea, use 3 teaspoons of flowers per cup of boiling water. Steep for 20 minutes and enjoy. Drink a cup of Chamomile at bedtime to relax and to sleep soundly. It is a natural sleep aid.  PEPPERMINT Peppermint is believed to help with the relief of hay fever. This plant can also grow in your herb garden. To make a peppermint tea, steep 1 teaspoon of this dried herb in 1 liter of hot water for 15 minutes. Peppermint generates internal heat and induces perspiration. This tea has been used to treat nervous headaches, restlessness and palpitations. But do not use peppermint if you have heartburn or esophageal reflux.  MINT, ROSEMARY, AND LEMON TEAS With a hint of the Middle East, this tea recipe is delicious and will help settle an overfull stomach. So when you eat a lot at your family barbecue, drink a glass of iced mint tea. Serve it in a long glass with lemons. Delicious!  To make mint tea, add 1 or 2 mint leaves to a glass of hot water. Add 1 sprig of rosemary, a slice of lemon, and 1 teaspoon raw sugar or honey.  Add raspberries or melons for a hint of color and even more antioxidants.
